The famous Messinian sausages are made with pork meat and fat, are flavored with orange, herbs and spices and are smoked for hours on olive wood.
A variation of these is the – the rare and extremely hard to find - omatia, a sausage made from the large intestine of a pig which is stuffed with pork meat, wheat, many herbs and spices. Its preparation is rare and is a sample of the gastronomic heritage and culture of the Messinian Land.
