Artichokes with eggs
Ingredients
- Wild artichokes
- Eggs
- Mint
- Salt, pepper
- Lemon
Recipe
We peel off the wild artichokes. We boil them for a little while and cut them into thin slices. In a pan, we add a small amount of oil, and when it gets hot we slightly fry the artichokes. We add a little bit of mint and we beat the eggs. We put salt and pepper and our omelet is ready. We serve by adding lemon.
Nutritional value
Eggs are a basic source of animal protein of high biological value in man’s diet. They offer to human organism vitamins, inorganic elements, but, also, cholesterol. Artichokes are rich in carbohydrates, vitamins A and K, potassium, magnesium and phosphorus.
